Manchego & Goat Cheese Quesadilla

Dairy Free, Lactose Free, or Vegan (optional GF)

These quesadillas are creamy and full of layered textures and flavors, just like the standard quesadillas made with cheeses we can’t eat. We tried different combinations and like them all. Cashew cheese also amps up the protein.

These make a hearty snack or satisfying meal, yet with little effort – or clean up. The secret is taking an extra minute or two to heat them up in a skillet instead of just popping them in the microwave. Microwaving tends to make the tortilla chewy, versus cooking in a skillet, which lets the tortilla puff up a bit and become flaky and golden. What a difference.

Manchego & Goat Cheese Quesadilla
These tasty pockets of flavor are quick and easy. We made them with Manchego and goat cheeses for a significant reduction in lactose, and we made a vegan version. Cashew cheese makes them more creamy and gooey like a traditional quesadilla.
Ingredients
  • 2 large flour tortillas (or gluten free)
  • 1 avacado, sliced
  • 2/3 c. cheese (any combination of goat cheese, Manchego cheese shredded or dairy free Chia Cheeze)
  • 2/3 c. Cashew Cheese
  • Optional add-ins:
  • 4 oz. green chiles, chopped (preferably Hatch)
  • 3/4 c. black beans
  • 1/4 c. corn (already cooked)
  • garlic poweder
  • Salsa
  • olive oil
Instructions
1. Place two tortillas on work surface. Spread cashew cheese on half of each tortilla. If using Chia Cheeze, spread on other half. Layer avocado slices on top of cashew cheese. Then add any of the following: green chiles, black beans or corn. Especially if adding black beans, you may like a ¼ tsp. of garlic powder sprinkled on the beans. 2. If using Manchego or goat cheeses sprinkle on top of the cashew cheese side. Fold tortilla in half. 3. Heat 10” skillet on medium heat. When hot, add 1 Tbsp. olive oil. 4. Heat quesadillas one at a time until the tortilla just begins to brown on each side, flipping carefully. 5. Cut each quesadilla into four wedges. Serve with your favorite salsa. Notes: Great with a simple green salad and fruit to make a complete meal.
