We love this salad. It's cool and sweet, crunchy and juicy. It's a terrific compliment to any summer barbecue or backyard party. Fresh lime juice enhances the natural sweetness of the summer fruits. And the jicama is a crunchy surprise.

If you are in a rush and wanting to cut some corners, we recommend buying precut watermelon and jicama. You can also easily turn this into a fun vegan salad cup by scooping some of the salad into butter lettuce cups.

We ate this salad after a long, hot day of working hard on the blog and found it was as refreshing and delicious as we'd hoped it would be. It made a great end to the day.

Refreshing Blackberry Watermelon Salad with Jicama

Fresh lime juice enhances the natural sweetness of the summer fruits in this salad. And the jicama adds a crunchy contrast. A bit of arugula makes it even healthier.

ingredients:

  • 6 ounces blackberries, fresh
  • 2 cups seedless watermelon, cut into 1” cubes
  • 1/2 cup jicama, cut into 1/2 “ pieces
  • 1 cup arugula
  • 2 tablespoon fresh lime juice (about 1 lime)
  • 1 teaspoon olive oil
  • dash of salt

How to cook Refreshing Blackberry Watermelon Salad with Jicama

  1. Rinse and dry the blackberries. In a medium bowl, gently mix the blackberries, watermelon, and jicama. Toss in the arugula.
  2. Whisk together the lime juice, oil and salt. Pour over the fruit salad and toss gently.
  3. Chill for at least 30 minutes. Serve chilled with a slotted spoon.
