A Super Easy Dessert
We’ve had two birthdays recently that fell on blog days. Happy birthdays to us! Each time it became a dilemma – we wanted a birthday treat but didn’t want to spend half of our day making cake, filling, icing and putting it all together. Baking a birthday cake can be fun and rewarding, yet often it’s exhausting. We’ve found making our own desserts a far better experience than trying to find delicious, dairy free options at a store or bakery. This recipe solved the dilemma - it’s delicious and sort of homemade but super quick and easy.
Rebel got an idea. She loves (loves) OREO cookies and found out a while back that they’re dairy free and vegan (although, caveat, they’re made in a facility where there could be cross contamination). She’d also recently found a dairy free pudding she really likes, so she put together a three-part parfait.
It’s super simple and delicious. Maybe it gives you ideas for your own variations. Make it with ready-made coconut whipped cream from the freezer section of your store, or mix your own from canned coconut milk. It’s delicious, cool and creamy.

OREO, Chocolate Pudding & Coconut Cream Parfait - Vegan & Dairy Free
ingredients:
- 4-3.5oz chocolate pudding cups - dairy free
- 1 container coconut whipped cream
- 4-6 OREO cookies
instructions:
- Take a spoon or spatula and scoop chocolate pudding into individual glasses or bowls. Smooth out to create a flat layer. Use 1/2 to 1 full cup of pudding depending on size of dish you are using (mini or regular).
- Using a different spatula or spoon put the whipped cream on top of the pudding to form a second layer.
- Put 4 OREO cookies inside a plastic bag or cover with wax paper and crush with a spoon or mallet.
- Sprinkle crushed OREO cookies on top of the whipped cream.
NOTES:
We enjoy both hazelnut chocolate pudding or almond milk chocolate pudding in this recipe. For whipped cream we recommend SO Delicious Coco Whip. Before use it needs to thaw in the refrigerator for a couple hours for the best consistency. Or, make your own coconut whipped cream using canned coconut milk. If you love dairy - substitute with regular milk pudding and cool whip or whipped cream.
