Goat Butter Scones with Rosemary & Lemon

At this point it’s probably coming across that we love, LOVE scones. We hope that you are starting to try these recipes out and love them too. There is something so easy about making scones compared to other baked goods. Maybe it’s because rolling out scone dough is sooo much easier than rolling out pie crust. Or it could be that scones bake well in the oven and are hard to burn (unless you walk away and forget about them). What I realize and appreciate is that once you get down the basic ingredients in a scone recipe, it can be really easy to get creative and add all sorts of additions to the original foundation, trusting that it will work out.

It’s important when making scones to not over stir the butter into the flour. Having small pea size chunks of butter makes the scones flaky and light when they come out of the oven. If over mixed they can become tough.
If you’re wondering how we thought of this recipe, here’s some insight…
For 4th of July this year we went to a new restaurant on the water. They served us the usual bread basket but instead of classic butter they offered goat’s milk butter with lemon. It was delicious. Like shockingly good. Somewhere around the same time we saw goat’s milk butter at our local Whole Foods and Mom had the genius idea to put it in a scone. Thus, our goat butter scones were born.
I love all scones equally so it’s hard to pick a favorite, but I was honestly so impressed with the flavor that they have to be in my top 3 of all time - which is saying a lot because I love scones. Let me know if my love for scones is coming on too strong. I hope you will try these out and love them like I do!

- 3 cups flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup goat butter
- 2 teaspoon grated lemon peel, fresh
- 1 ½ tablespoons fresh rosemary, finely minced
- 3/4 to 1 cup almond milk or coconut cream
- 1 tablespoon lemon juice
